As to your specific question I would make several recommendations:

* The high end is really two places: Man Wah at the Mandarin Oriental and Mott 32 at the Standard Chartered building. Both are exceptional. Traditional Chinese cuisine including famously done Peking Duck in both spots

* A little more "local" and if they like spicy food, I would look at San Xi Lou in mid-levels, Yan You Sui Tsui in Kowloon, Sijie in Wan Chai or Chili Fagara near Hollywood Road

* The fancy club to go to is China Club by David Tang - very solid food and a scene, but not quite as good as the first two. It is a private club but any nice hotel concierge will be able to get them in
