That seems to be an easy question. The ONE I would keep is:

Not because it is a rare model today, but because it was my first Rolex and a gift from my father in 1979.
But wait a minute….. What to do with my Day-Date 18038:

Now the dilemma starts: The Day-Date was bought by my father in 1982 and was his watch for special occasions. Unfortunately may father died in 2000 and 4 weeks before his death he gave the Day-Date to me for keeping it well.
And if the question would be extended from Rolex also to other brands, the question would become nearly impossible to answer for me.
E.g.: The first Omega from my father, bought 1954:

So I have to correct my first statement: It is NOT an easy question because memories and family traditions are linked to some of my watches. Selling those watches would mean also selling a part of myself. Maybe I´m to sentimental (I know, these are ONLY watches…), but hopefully I will never come into a situation, that I really have to ask this question to myself.

At the moment I have 16014, 16710, 116520, but there´s no one among them I wouldn´t let go for a watch, like a Lange 1...!
A question hard to answer - but Matthias brought up some great aspects - at least for me.
All my Rolexes I have bought myself - I simply do not know which one I would keep if there could only be one. In my opinion that is also a very hypothetical question - I one had to give up the collection but for one wtach - what would be the reason? Money? Then it would be hard to argue that the one to keep would perhaps be the most expensive ...
But there is one watch I would hardly part with - the one I got on the occasion of my high school graduation:
